Low-Calorie Pesto Pizza

November 5, 2022

The most delicious low-calorie pizza recipe, that you can make in under 20 minutes! This Greek yoghurt pizza with pesto dressing will become your new favourite recipe – healthy, high protein and so easy!

Pesto Pizza

One of the easiest pizza recipes, and takes only 20-25 minutes to make with only 88 calories per slice! This pizza is super healthy, high protein and most importantly uses no yeast.

If you are to make this pesto pizza as low calories as possible, I've given instructions for homemade pizza dough below but don’t feel obligated to make it if you are not restricted on calories. Store-bought pizza dough works beautifully and makes this recipe totally doable on a weeknight. Same goes for the pesto — if you want to make it from scratch, that's great, but store-bought works well, too.

SUBSTITUTES

Are you missing something? No problem. Keep on reading and you are going to learn how to replace all recipe ingredients.

  • All-purpose flour: replace with spelt flour or wholewheat flour. This recipe does not work well with oat flour or almond flour.
  • Coconut flour: use more of any of the flours mentioned above, just use double the quantity of coconut flour.
  • Greek yoghurt: replace with Skyr or quark. Also dairy-free, as long as it has a thick and firm texture (no runny yoghurt here!).
  • Egg whites: use more greek yoghurt instead
  • Baking powder: skip if you don’t have it. The crust will come out anyway, but it will stay pretty flat.
  • Pesto sauce: You can, of course, use your favourite recipe for pesto or a jar of quality store-bought pesto.
  • Mozzarella Cheese:  Mozzarella is the prime pizza cheese and tastes unbelievable with the garlicky pesto.
  • Fetta Cheese:  adds a little saltiness, but you can also use Pecorino or Parmesan cheese.
  • Other optional toppings:  You can add more toppings to the pizza before baking, like sliced tomatoes (I usually use halved cherry tomatoes). Or try sliced bell peppers, mushrooms or olives.

    Ingredients

    • 70 g 1/2 cup All-Purpose Flour

    • 12 g 1/8 cup Coconut Flour

    • 5 g 1 tsp Baking Powder

    • 1 tsp 1 tsp Sea Salt

    • 1 tsp 1 tsp Garlic Powder

    • 150 g 3/4 cup No Fat Greek Yoghurt

    • 75 g 1/3 cup Egg Whites (3 large)

    • Toppings
    • 1/3 1/3 Homemade Pesto Sauce

    • 30 g 1/4 cup Light Mozzarella

    • 30 g 1/4 cup Fetta cheese

    • 20 g 1/8 cup cherry tomatoes

    • 10 g 2 tsp olives

    • Fresh basil

    • 1/2 tsp 1/2 tsp Oregano

    • 1/2 tsp 1/2 tsp Basil

    Directions

    • Preheat the oven to 200 degrees C. Add the dry ingredients to one bowl and the wet ingredients to another. Mix the dry ingredients together to avoid clumping and repeat with the bowl of wet ingredients. Mix the dry ingredients with the wet.
    • Cover a pizza pan with parchment paper, then spread the dough into your desired pizza shape. I highly recommend spreading the dough out like an actual pizza with the edges having more dough than the middle. This will ensure that it bakes right and has a thick crust. Bake your pizza for 6-8 minutes, take the pan out, remove the parchment paper, and place it back into the oven for 3-5minutes. By taking the parchment paper off, the bottom of the crust airs out and will cook more evenly.
    • When the crust is done, add your toppings. Start by spreading the homemade pesto sauce evenly on the crust, then spread the mozzarella and feta cheese. Chop the tomatoes and the olives, and add them on top. Finally, add some fresh basil and a dash of oregano.
    • Place them back in the oven for 3-5 minutes. Take the pan out and enjoy this heavenly pizza!

    Notes

    • For pesto sauce I have used homemade pesto, it tastes way better! If that's not an option, a pesto from a local store will work just as fine.
    • If you are not restricted on calories, use whole eggs instead of egg whites
