These pancakes provide a boost of protein and fiber, making them a fantastic choice for a hearty breakfast or post-workout meal. We'll finish them off with a decadent topping of Oreo crumbles and creamy vanilla yogurt for a delightful contrast of flavors and textures.

SUBSTITUTES

Here are some alternative ingredients you can consider if you want to further customize this recipe:

  • Egg subsitute:  For a vegan option, replace the egg with a flaxseed or chia seed egg (1 tablespoon ground flaxseed or chia seeds mixed with 2.5 tablespoons of water).
  • Milk: Choose your preferred milk, whether it's dairy milk, almond milk, soy milk, or oat milk. The choice depends on your dietary preferences.
  • Oat flour: if you don't have oat flour, you can add in blender oats and blend for a couple of seconds. Alternatively, you can use whole wheat flour, coconut flour, almond flour, or a gluten-free flour blend for a healthier twist.
  • Protein: You can use any protein powder you like such as casein, whey or vegan. If you prefer not to use protein at all, replace with oat or all-purpose flour. 
  • Baking powder: You can replace it with bicarbonate soda
  • Sweetener:  opt for natural sweeteners like maple syrup, honey, or agave nectar. You can adjust the sweetness to your liking.

For the toppings:

Feel free to get creative with toppings. In place of Oreo crumbles, try fresh berries, sliced bananas, chopped nuts, or dark chocolate chips.

Craving a stack of nutritious pancakes that still satisfy your sweet tooth? Look no further! In this recipe, we'll whip up a batch of healthy pancakes using eggs, milk, oat flour, protein powder, baking powder, and a touch of sweetener.

Ingredients

  • 1 1 Egg White

  • 1 1 Egg

  • 50 ml 50 milk unsweetened almond milk

  • 30 g 30 oats (oat flour)

  • 20 g 20 protein powder

  • 1 tsp 1 Baking Powder

  • 1 tbsp 1 tbsp Zero Calorie Sweetener of your Choice

  • Toppings
  • 1 1 Oreo biscuit

  • 60 g 60 Vanilla Yoghurt

Directions

  • Add all the dry ingredients into a bowl and mix to help avoid clumping when combined with the wet ingredients.
  • In a mixing bowl whisk together egg, egg white, and milk and stir well. Set aside for 2 to 5 minutes.
  • Combine wet and dry ingredients. Slowly add water if needed and mix until it yields a batter consistency. Don’t over-mixing the pancake batter! Leave the batter to rest for 10 minutes.
  • Then, use low-calorie cooking spray in a non-stick frying pan and split the mixture into 3 or 4 portions in the pan.
  • Leave the pancakes to fry for 1 minute before flipping and frying for another 1 minute on the other side. When bubbles begin to appear on the surface, it's time to flip the pancakes.
  • Place cooked pancakes on a cooling rack, and do not stack them until all pancakes are ready, to make sure they don’t get soggy.
  • When pancakes are ready, stack them, and top them with vanilla yoghurt and Oreos! Enjoy!

Notes

  • The thicker the pancake batter, the fluffiest the pancakes will be. Also do not over-mix the pancake batter and leave it to rest for 10 minutes.
  • Once pancakes are cooked, place them on a cooling rack so they won't get soggy.
