Nothing says summer like backyard BBQs and ice cream. This protein Ice-cream sandwich hits the spot on a sunny summer day. It’s easy to make and can be stored away in the freezer. This ice cream is the closest thing to the famous Ben & Jerry, in a healthy version. 14 grams of protein and just under 200 calories!

Cheesecake ice cream

Ingredients

● 100g 0% Greek yogurt

● 100g light cream cheese (I have used Philadelphia)

● 1 scoop impact whey protein (strawberry)

● 30g dark chocolate chips

Base & Toppings 

● 8 malted milk biscuits

● 30g Blackcurrant Jam Skinny Food Co. - Blackcurrant Jam

Cooking instructions

1. In a bowl, mix the yoghurt, cream cheese and protein powder together until combined in a smooth mixture.

2. Add the chocolate chips and stir through.

3. Then, in a small tray, add a layer of malted milk biscuits that have been dipped into milk beforehand. Add the ice cream mix, smoothing out with the back of a spoon.

4. Add the blackcurrant Jam (or jam of choice) and then cover with another layer of biscuits.

5. Freeze overnight, then slice up into 4 sandwiches and enjoy!
