Mini protein pancakes are way faster than the traditional pancake recipe, as you can cook all pancakes together at once! Super quick and delicious meal!

Mini Protein Pancakes

These are so easy to make and with these healthy ingredients, I am always full, satisfied, and fueled with energy after eating them!

You can stack them up as you do with usual pancake recipes, or keep them on your plate side around your toppings (as I did with these pancakes)!

My go-to toppings have been berries and yoghurt with these pancakes, but there are so many variations you can try!

Mini Protein Pancakes

SUBSTITUTES

Here are all the ingredients and substitutes that you need to make these protein pancakes:

  • Milk: For a low-calorie option use unsweetened plant-based milk such as almond, coconut, soya, or rice milk.
  • Protein: You can use any protein powder you like such as casein, whey or vegan. If you prefer not to use protein at all, replace with oat or all-purpose flour. 
  • Egg white: you can replace it with one flaxseed egg.
  • Coconut flour: You can use any other flour, but you will need to use double the quantity of coconut flour.
  • Yoghurt: my favourite yoghurt is Greek, but Skyr or quark are always great options. Also, plant-based would work well.
  • Sweetener: you can use stevia, honey, agave or maple syrup or any other sweetener you like.
  • Banana: you can swap banana with apple sauce.
  • Mixed berries: instead of berries use any fruit you prefer.

Mini protein pancakes are way faster than the traditional pancake recipe, as you can cook all pancakes together at once! Super quick and delicious meal! 

    Ingredients

    • 50 ml 50 milk of choice

    • 40 g 40 protein

    • 1/2 tsp 1/2 baking powder

    • 1 1 egg white

    • 1/2 medium 1/2 banana

    • 15 g 15 coconut flour

    • Toppings
    • 100 g 100 yoghurt 0%

    • 1 tsp 1 sweetener of choice

    • 100 g 100 mixed berries

    Directions

    • Add all the dry ingredients into a bowl and mix to help avoid clumping when mixed with the wet ingredients.
    • In another bowl add all wet ingredients and stir well. Set aside for 2 to 5 minutes.
    • Combine wet and dry ingredients. Slowly add water and mix until it yields a batter consistency. Don’t over-mixing the pancake batter!
    • Then, use low-calorie cooking spray in a non-stick frying pan and split the mixture into 6 or 8 portions in the pan.
    • Leave the pancakes to fry for 1 minute before flipping and frying for another 1 minute on the other side.
    • In the meanwhile, for the yoghurt dressing, mix yoghurt with any sweetener of your choice.
    • When pancakes are ready, top with the yoghurt dressing and with plenty of mixed berries! Enjoy!
