We love to make brownies and cupcakes, but there’s something extra indulgent about a cheesecake pot. And actually, the recipe for this Protein Biscoff Cheesecake is much easier than you’d think, and only requires 4 ingredients!

Biscoff Protein Cheesecake

SUBSTITUTES

Here are all the ingredients and substitutes that you need to make this high-protein biscoff cheesecake:

  • Yoghurt: my favourite yoghurt is Greek, but Skyr or Quark are always great options. Also, plant-based would work well.
  • Protein powder: My recommendation is to use a whey protein with a salted caramel flavour, but a vanilla flavour will work well. You can use vegan or whey protein, but the quantity will vary depending on which protein you will use. If you don't want to use protein at all, that's fine just replace it with a sweetener of your choice. 
  • Biscoff Spread: Biscoff spread comes in two types, smooth and crunch. The crunchy version has bits of biscuits in it, whereas the smooth is, well, smooth. You may not have both available to you, so choose whichever you can get. If you have the option, we prefer to use the smooth spread, as it results in a smoother cheesecake and looks great as a topping. But you can give the crunchy version a go too!

A delicious high protein Biscoff cheesecake, with a Biscoff biscuit base, creamy Biscoff cheesecake filling, and a caramel layer on top.

Ingredients

  • Biscuit layer
  • 3 3 Biscoff biscuits

  • Cheesecake layer
  • 15 g 1 tbsp Salted Caramel Whey Protein

  • 100 g 2/5 cup no-fat yoghurt

  • 5 g 1 tsp Melted Biscoff spread

  • Caramel layer
  • 20 g 1 1/3 tbsp Melted Biscoff spread

Directions

  • For your layers, you will have the biscuit layer at the bottom, the cheesecake filling in the middle and the caramel layer at the top.
  • Initially, in a bowl crush 3 Biscoff biscuits. Transfer half of the crushed biscuits to a glass or mason jar.
  • Melt 25g of Biscoff spread using a microwave for 20".
  • For the Cheesecake filling, combine yoghurt, protein powder and 5g of melted Biscoff spread. Mix till you get a runny icing-like consistency. Transfer half of the cheesecake filling on top of the crushed biscuits.
  • Then, pour over 10g of melted Biscoff.
  • Repeat again all three layers in the same order, with the remaining ingredients.
  • Top with more crushed Biscoff biscuits and enjoy!

Notes

  • You can replace the protein powder with a sweetener of your choice.
  • You can make this recipe vegan by using dairy-free yoghurt and protein!
