Protein Biscoff Banana Bread

This quick and easy biscoff banana bread is the best I've ever had. Whether you are a Biscoff lover like I am or don't even like cookies, this recipe is a frosting lover's dream. The combination of protein powder and yoghurt that form the batter makes this bread super soft and healthy.

Peanut butter adds a great addition to bananas so that when you slice this homemade banana bread it will be soft, sweet, and smooth like butter in your mouth. However, the spread that really makes this bread special is my Biscoff frosting.

SUBSTITUTES

Here are all the ingredients and substitutes that you need to make this delicious healthy Biscoff Bread:

  • All-purpose flour: if you want to make it even healthier, you can use oat flour. If you don't have oat flour, you can add in blender oats and blend for a couple of seconds. 
  • Protein: For this recipe, I recommend using casein or vegan protein. If you use whey protein, you may need to add some more flour. If you don’t have protein at all, replace it with 100g of all-purpose flour.
  • Baking powder: You can replace it with bicarbonate soda
  • Bananas: the more ripe the bananas are the sweeter the bread will be.
  • Peanut butter: you can replace it with any nut butter of your choice, in the same quantity.
  • No-calorie syrup: There are plenty no calorie syrups out there, but what I use most is from Myprotein. You can also replace it with honey, agave or maple syrup or any other liquid sweetener you like.
  • Yoghurt: my favourite yoghurt is Greek, but Skyr or quark are always great options. Also, plant-based would work well. My favourite plant-based is soya Alpro dessert.

Ingredients

  • Dry Ingredients:
  • 100 g 100 all-purpose flour

  • 100 g 100 vegan protein *

  • 1 tsp 1 baking powder

  • 6 6 crushed Biscoff biscuits

  • Wet ingredients
  • 4 medium 4 mashed bananas

  • 70 g 70 peanut butter

  • 80 g 80 no-calorie syrup

  • 150 g 150 fat-free yoghurt

  • Frosting:
  • 30 g 30 melted Biscoff Spread

  • 100 g 100 fat-free yoghurt

  • 20 g 20 protein

  • Toppings:
  • 6 6 crushed Biscoff biscuits

  • 30 g 30 melted Biscoff Spread

Directions

  • Preheat the oven to 180C/350F. Line a loaf pan with parchment paper, and set aside.
  • In a large mixing bowl, add your dry ingredients except for the Biscoff biscuits and mix well. Add your wet ingredients and mix until just combined. Crush up the Biscoff biscuits then add them to the batter, and fold through evenly.
  • Transfer your batter to the loaf pan and spread it out evenly. Top with the remaining biscuits. Bake for 35-40 minutes, or until a skewer comes out just clean.
  • In the meanwhile, to make the frosting, melt the Biscoff spread then add it to a medium bowl along with the yoghurt and protein powder. Mix until smooth.
  • Remove the bread from the oven and let it cool in the pan completely. Then spread the frosting evenly over the top of the banana bread.
  • Finally drizzle with extra melted Biscoff, slice and enjoy!

Notes

  • *I recommend using casein or vegan protein for this recipe. If you use whey protein, you may need to add some more flour. If you don’t have protein at all, replace it with 100g of all-purpose flour and more syrup.
  • TO STORE: Banana bread should be stored in a sealable container or covered in plastic, in the refrigerator. It will keep well for up to 1 week.
