These pistachio protein bars are a delightful blend of creamy pistachio butter, rich cocoa, and a hint of sweetness from maple syrup. They're perfect for a post-workout snack, a quick energy boost, or a healthy treat. The pistachio layer adds a unique texture and flavour, while the dark chocolate drizzle provides a satisfying finish.

Directions

  • In a medium bowl, combine the pistachio whey protein powder and cocoa powder. Whisk until well blended.
  • Add the 85g pistachio spread, 2 tbsp maple syrup, and 100ml coconut milk.
  • Mix thoroughly until a thick, uniform dough forms. You may need to use your hands to bring it together.
  • Line a small rectangular baking dish (approximately 8x4 inches or similar) with parchment paper. Press the base layer mixture evenly into the prepared dish, creating a smooth and firm base.
  • In a separate bowl, combine the 85g pistachio spread and 1 tbsp maple syrup. If the mixture is too thick to easily spread, add coconut milk one tablespoon at a time until you reach a spreadable consistency. Spread the pistachio layer evenly over the base layer.
  • Place the baking dish in the refrigerator for at least 2 hours, or until the bars are firm.
  • Once firm, remove the bars from the dish using the parchment paper overhang. Cut the bars into 6 equal portions.
  • Melt the 60g dark chocolate using a Bain Marie, stirring in between, until completely melted and smooth.
  • Drizzle the melted dark chocolate over the bars and enjoy!
